My family is not made up of fish lovers. A more accurate description would be fish tolerators. In fact, if it weren't for the health benefits of fish, I probably wouldn't even bother adding it to our menu.
The following recipe is one of my own concoctions. If you find that you don't really care for fish, give this recipe a try. It does a fine job of disguising the fact that you are eating seafood.
Pan-fried Tilapia
4 fillets, rinsed and patted dry
1 egg, beaten with a splash of water
1 cup panko
1/4 cup flour
Greek seasoning blend
2-3 tbsp canola oil
Combine panko and flour in shallow dish.
Generously sprinkle fish with Greek seasoning blend before quickly dipping into egg mixture. Place the tilapia into the panko dish, gently pressing the bread crumb mixture into the fillet.
Pan-fry on medium to medium-high in 2 tbsp of oil, adding more oil if necessary.
The fish is done when it is golden and flakes easily with a fork.
